Easy Banana Pancakes
The perfect 5 minute breakfast
I found this recipe in the depths of Pinterest a few years ago and didn't think it would actually work but it is now my fail-proof breakfast food of the year!
These banana pancakes have saved my stomach almost every school morning! There are two variations of this quick and easy recipe and let me tell you it only takes 5 mins to prep, cook and eat!
The usual 'fast breakfast' options include toast, pop tarts or sugar-stuffed cereals. None of which contain the essential nutrients your body needs in the morning- just because you're in a rush, doesn't mean you should have to give up your health for that day.
This recipe uses banana's and eggs which provide some of the essential ingredients your body needs. Bananas contain many essential vitamins and minerals such as: Potassium, Magnesium, Iron, Fibre.... The list goes on and on and eggs are the ultimate source of protein, which will last you through the day, what more could you want from a pancake?
Usually eating a healthy breakfast means carving out a whole lot of time in the morning to prep, cook and eat a fancy vegetable omelet or something of that sort and all the 'quick and easy' breakfast recipes either involve preparing the ingredients the night before.
These do not work when you overslept and are already late but know you need something nutritious to keep yourself going until your morning coffee, not to mention that usually these recipes aren't the most delicious and usually involve vegetables and those are usually not the best wake up food.
Breakfast should be the meal you eat your protein and healthy sugars (fruits).
The first reason this recipe is perfect is that it contains some great protein as well as a serving of fruit, its fun, fast and delicious!
Here's my super simple Banana Pancake Recipe:
Materials:
Bowl/ blender
Fork
Good non-stick pan
Ingredients:
1 large banana
2 large, free-range eggs
Method:
Note: If you have the use of a blender follow 1 and ignore 1a, if you do not have a blender, ignore 1 and follow 1a. Both then proceed on to 2. If you do not use a blender your pancakes may be a little lumpy but that depends on how much you mash the banana and can actually give the pancakes more flavour.
1. Place the two eggs and peeled banana into your blender and whizz until they form a runny consistency.
1a. Place the peeled banana into a bowl and mash with a fork until the consistency is as runny as possible
1b. Add the eggs and whisk the ingredients together until they form a slightly lumpy, runny consistency.
2. Pour the mixture into a heated, greased non-stick pan.
3. Wait 2-4 minutes (depending on how large your pan is) and flip the pancake over when the underside reaches a golden colour.
4. Cook for 1 minute or less on the other side until golden.
And that's it! The larger your pan is, the better your results will be and the faster your pancake will cook. You can even add blueberries or toppings but eating the pancake on it's own is super yummy and you can fold it up to eat on your way to work/ school.
